A 1918 planner entirely used as a butcher's ledger. The handwritten entries detail sales throughout the year: beef, veal and mutton, offal, cuts for pot-au-feu, quantities, prices and customer accounts. In the midst of the First World War, this notebook bears witness to the daily activity of a food business. It retains its dark cloth cover with the gilded title "Agenda 1918" and its characteristic elongated format.
